Moon Cakes

These moist little cakes are a staple in the Seigfried family tradition.

5 eggs

2 c sugar

1 c milk

powdered sugar

3/4 c butter

1 1/2 tsp baking powder

1 tsp vanilla or lemon

ground walnuts

Beat egg yolks, sugar, milk, butter and baking powder.

In separate bowl, beat egg whites and vanilla or lemon till it peaks. Fold both mixtures together until well combined. Do not beat or over mix.

Pour into lightly greased and floured sheet pan. Bake at 350 degrees for about 30 minutes.

Sprinkle with powdered sugar and walnuts. Cut with moon shaped cutter or edge of round glass.
