Peanut Butter Balls

These creamy treats are delicious and easy to make. Try the white chocolate coating for variety. By Matthew Schleis.

1 c confectioner’s sugar

1/2 c creamy peanut butter

3 tbls butter or margarine, softened

1 lb white or chocolate confectionary coating

In a mixing bowl, combine sugar, peanut butter and butter. Mix well.

Shape into 1 inch balls and place on a cookie sheet lined with wax paper. Chill for 30 minutes or until firm.

Meanwhile, melt the coating in a double boiler or microwave-safe bowl. Dip balls and return to waxed paper to harden.

Yield: 2 dozen.
